Spicy pumpkin soup


Ingredients:
-4 Tbsp unsalted butter
-2 teaspoons minced garlic
-1/4 teaspoon crushed red pepper
-1 teaspoon ground coriander
-Pinch ground cayenne pepper
-3 (15 oz) cans of pure pumpkin (6 cups)
-5 cups of vegetable broth
-2 cups of milk
-1/2 cup brown sugar

Instructions:
Blend ingredients and simmer on low for 15min. Garnish with either sour cream, pumpkin seeds, or cilantro.
